Cast iron cookware makes your food taste better. It has very great heat conductivity and heat retention. This is important to get your steak crispy and tender inside. However, it is dense and takes time to maintain. We don't hope that you leave your cookware unused under the kitchen rack. Knowing what you need is important to help you in choosing the right type of cookware.
There are certain factors you can consider when choosing your cookware.
The thermal conductivity of a material is a measure of its ability to absorb and transmit heat. The higher the heat conductivity, the faster the material will heat up and the more evenly your food will cook. high thermal conductivity also means the material react fast to the temperature change.

For instance, if you heat poor thermal conductivity cookware on a burner, you will notice that the center spot has been heated up but the edges are still cold. Imagine if you using a larger pan and the edges of the pan will never get hot on a tiny burner. This results in uneven heating and affecting the quality of food.
Cast iron has an average thermal conductivity as compared to other materials. One solution to this problem is to make the material thicker. That is the reason why Grater's cast iron pans are thick and heavy.
Heat capacity s the ability of a material to retain heat. The thicker and heavier pan tends to retain heat longer.

Cast Iron is a poor conductor of heat but has great heat retention which means it's slow to heat up and slow to cool down and this makes cast iron a preferred material for dutch ovens, frying pans, griddles, and grill pans.
Some metals react with certain foods and may affect the taste of our food. Besides the thermal diffusivity (thermal conductivity divided by the unit heat capacity) we mentioned above, we would like to suggest to you some less reactive material cookware such as stainless steel, glass, or glazed ceramic. Unfortunately, they have the worst thermal diffusivity.
Aluminum, copper, and cast iron on the other hand react with acidic food such as tomato, vinegar, wine and etc. It means that your food can actually absorb some of the metal, so take care of your cookware choices and ensure that you are aware of the reactivity of each product.
Cast iron can react with acidic foods and ingredients that are cooked/stewed for a long time unless the cookware is highly seasoned. The high acidity of these foods will strip the seasoning and result in discoloration and metallic tasting food.
Two ways to resolve this issue - seasoning or enameling. With regular seasoning and usage, the layers of oil/fat are slowly cooked into the porous iron until the oil/fat polymerizes forming a protective barrier between the food and the metal. Please wait until cast iron skillets are better seasoned to cook these types of foods.
Induction-compatibility of your cookware is something to keep in mind if you own an induction countertop cooker. For cookware to work on an induction cooktop it must be comprised of, or contain, a ferromagnetic metal such as cast iron or stainless steel.
Aluminum, copper, or glass cookware will not work. But many manufacturers started to add a magnetic layer to the bottom of these pots and pans.
We guess this is one of the concerns in choosing the cookware. The amount you pay for your cookware will most likely be a determining factor in what you end up buying. The rule of thumb with cookware is to buy the best you can afford.
Every cookware has a different life span, depends on how we take care of them. For instance, non-stick coated pots & pans tend to have a shorter lifespan than metal made cookware.
If you would prefer not to have to maintain your cookware every day just to keep it looking good then you will need to consider the easy-clean & care range of products such as non-stick coated (Teflon) cookware. However, this cookware is losing its non-stick capacity over time and could get to release a substance and gases harmful to health at very high temperatures. Copper and cast iron cookware generally require quite a bit of work to keep it looking pristine whilst stainless steel are normally a little easier to look after but the food is easily stick on stainless steel.
Check the weight before buying cookware. Light cookware will be easier to handle, although sometimes this is difficult to achieve good cooking effect depending on the material you choose for your cookware. The lighter ones are usually the Aluminum, Copper, Teflon, ceramic, and stainless-steel cookware, while the cast iron pans are the heaviest due to the very nature of the material. This is especially indicated for frying pans since they are the container that you will have to handle the most to sauté, stir, flip the omelet and etc.
